On a totally different note....

What the heck do you do to chicken at your house? I am so tired of the same old thing. I need new ideas for meals. I will include 2 of our favorite Kid Friendly recipes and would love it if you would post some of yours! They can be anything, just easy and relatively cheap to make.

Taco Salad:
1 lb ground turkey/beef: Cooked and drained
1 can diced Mexican Tomatoes (don't drain)
1 package taco seasoning(add half the water listed)
1 can black beans- rinsed and drained
1 can corn- drained
lettuce
mexican cheese
sour cream
tortilla chips
Mix all the first 5 together, top it with the rest, kids LOVE it!

Best Mac n Cheese EVER!
2 cups Macaroni Pasta(uncooked) - we use Barilla pasta plus- more fiber and protein
1- 5 oz can evaporated milk
2 cups shredded mild cheddar- you can use a variety of cheeses though
1 egg- whipped a bit
salt and pepper to taste
Optional Mix ins- Peas, Broccoli Florets, Keilbasa, Ham bits....

Boil and drain pasta, while pasta is draining, add milk to empty pot, stir in half cheese, let melt, add in pasta, add rest of cheese and stir well, then at the very end stir in raw egg FAST and WELL!! It makes the cheese congeal nicely and keeps it from being "Grainy". You can then add any mixins you want. This is a Great Mac and Cheese and just as easy as the box kind. Warning: I have had many daycare kids stop eating any blue-box type after eating this. Use at your own risk!

Chicken! I know it gets boring, that's why Yoshida's was invented.
cook up some chicken, pour on a little yoshida's, grab those steam fresh broccoli bags, make a pot of rice and get out the chopsticks :).

I also like to shred up a bunch of cooked chicken and add taco, fajita spice, or bbq sauce.

and if all else fails, shake and bake it like mom did. Still yummy after all these years.

well mine is easy cheap but you need a pressure cooker. I use them a lot in my cooking.
Easy beef stew.
I usually get the beef stew seasoning at the store in the package, Cut up my favorite root veggies in big chunks, potato's, carrots, onion, Celery. Get the precut beef cubes. Brown the beef, throw everything in the pressure cooker. Let cook for about 20-30 minutes with full pressure. Then done. prep time is maybe 15 minutes.

I have never had a pressure cooker, I am afraid they will blow up. I have always wanted to try it though....Maybe I will get one at a second hand store and give it a try. Beef Stew fast sounds good.

I think a lot of people have that same fear of pressure cookers. I was raised with them as a primary cooking tool and have never had one blow up in my entire life. They make them pretty fool proof these days. And I am sure if you find a quality one at the thrift store it would work just fine! The other great thing about them is the steam that comes out makes your house smell like you have been cooking all day, when in fact you cooked a super flavorful and tender meal in 40 minutes or less.
