On a different note:

I love Costco's Rotisserie Chickens. They are so tasty and tender. I rip off the meat and use it in all kind of recipes. Each chicken gives me about 4 cups of meat, so I can usually get 2 meals out of each chicken. Tonight I am making it into White Chicken Chili, a favorite around here. Last night I made chicken enchiladas, they turned out so flavorful! I know this is a weird post, but I don't get out a lot these days!

I can't stand to pull chicken from a whole one. It is the one thing I hate about Thanksgiving turkey. Too much work although I do agree that the meat tastes delicious!

Know what I am doing right now? I am boiling down the carcass from the Costco chicken I bought yesterday for stock. We had plain old chicken last night, BBQ sandwiches today, and who know what tomorrow, but fajitas sound promising. The only thing I hate about picking is the hand washing. I feel like I need to wash about 10 times to feel like I won't give salmonella to everything I touch, which is silly, because it is cooked.
